Green Enchiladas in Mexico Green Enchiladas in Mexico Blog Mexico SHARE Ricky Carbis , March 30, 2012 / 2 I can not begin to explain how much I love green Enchiladas. I love them so much; I am going to write a whole post about them. I could eat these all day, really, I mean it. I once went to a restaurant in Mexico and ordered two plates of Enchiladas, the waiter asked if I was waiting for friend to come and should he get another chair for my friend… I had to explain that both plates were for me… the look on the waiters face is something I will never forget. I also once had green enchiladas for breakfast, lunch, and dinner… two days in a row. Being in Mexico is amazing, but the food is just making me fat. Chicken, cheese, Green salsa sauce, tortillas – does it get any better? Add some rice and you have pretty much captured my heart. Oddly I am not so much a fan of the red enchiladas though? Green Enchiladas Mexico And I am one of the fussiest eaters you will ever find! Back home in London my mum used to HATE cooking for me, hate with a passion. Every day I would be undecided and any tiny little thing wrong with the food – I won’t be eating it. But in Mexico I am perfectly happy to sit and eat plate after plate of those amazing little green Enchiladas. Infact, writing this post is making me hungry so I will end it with that, I am off for some food. You know what I’m going to eat..
